Beet Hummus

Hummus is usually associated with chickpeas, but not this one. You’ll find this hummus is pleasantly pink, thanks to the jewel-like red of the beets that are used to make it. Beets are packed full of nutrients, so dive in! 

1. Blend all ingredients in a food processor until smooth. Taste for seasoning. Sprinkle with the extra lemon zest and drizzle with olive oil.

2. Serve with Whole Wheat Pita Chips or celery sticks.

If you want to save some time, look for Rocal vacuum packed, pre-cooked and peeled beets in the supermarket. These beets are a great pantry standby. They are vinegar free and, left unopened, will keep almost indefinitely.
