Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 teaspoon curry powder
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • 1 pound green beans, topped, tailed and cut in half across.
  • ½ teaspoon salt

Directions

  1. In a sauté pan, heat olive oil on medium heat. Add the onions and sauté until the onions are soft and translucent, about 5 minutes.
  2. Add the curry powder, paprika and oregano. Cook stirring until the onions are coated in the spices, about 30 seconds. Add the green beans and season with salt. Cook the green beans for about 5 minutes, stirring, or until they are just soft. Add 2 tablespoons water if needed.

Chef Tips

For a little extra flavor, add a couple of tablespoonfuls of coconut water instead of tap water in step 2.
