Ingredients

    2 tablespoons olive oil

    1 pound extra firm tofu, drained and pressed, crumbled

    1 teaspoon turmeric

    1 teaspoon onion powder

    1 teaspoon garlic powder

    1 teaspoon cumin

    4 whole wheat tortillas

    1 cup cooked black beans

    1 avocado

    1 cup pico de gallo or other salsa

    Salt to taste

Directions

  1. In a sauté pan over medium heat, add olive oil. Add tofu, turmeric, onion powder, garlic powder and cumin. Cook for about 5 minutes and season with salt. Cool.
  2. Place tortillas on a workstation. Place a portion of tofu, beans, avocados and salsa on each tortilla.  Wrap into a burrito.
