Labor Day is done and the kids are officially heading back to school. That means getting up to pack those school lunches again. It can be hard to get back into the usual rhythm of school routine, especially if a parent or other family member has cancer. Having some ideas for healthy, tasty school lunches at the ready can at least make things a little easier. Here are some of our favorite brown bag ideas for healthy school lunches that kids (and adults) will love. Add a piece of fresh fruit, and you’re good to go! Some tips: cook extras of things like black bean burgers, meatballs, chicken burgers and muffins for the freezer – they can defrost in the body of the fridge overnight; individual pizzas are super easy to make on mini pita breads which can also be kept in the freezer; toss leftovers from last night’s pasta with little extra olive oil to repurpose into a quick pasta salad for lunch; meatloaf is easy to put into a sandwich with some salad greens like baby spinach; hummus and hardboiled eggs are a nutrient packed snacks; and when it’s cooler, a thermos of minestrone will help get in those 5 veggies-a-day.
