Root veggies aren’t often the stars of the table. Carrots, beets, parsnips, turnips, celery root, potatoes and sweet potatoes, among others, are usually in supporting roles or flavor elements of soups and stews, but rarely are they front and center. That’s a shame. In the wintertime they provide us with minerals, phytonutrients, vitamins like C and A, and, of course, tons of fiber. We should be eating more of them than we do.
