When you want to beat the summer heat, try eating your food cool or at room temperature. It is simply delicious. Cold dishes are also a practical proposition for the cancer patient. They have a lot less odor that when served hot, making them easier for anyone feeling queasy or nauseous after chemo to eat. Eating food at room temperature is not a new idea. Just think of a gorgeous Italian antipasti table loaded with delicious cold dishes and you’ll know what I’m talking about. Although it may seem counterintuitive, even a sturdy soup like Pasta Fagioli can be a delight at room temperature, drizzled with a little good olive oil. I also like to eat classic dishes cold, think meatloaf either in sandwiches or plated with some salad. Cold poached salmon is also delicious, and roast or grilled chicken can make a whole slew of yummy sandwiches and salads at room temperature. In any event, the cold dishes in this menu are easy and delicious. Enjoy!
