In season: Fresh beets are best from late spring through fall. Buy vacuum packed beets for convenience if you desire.
How to buy: Choose medium-sized or baby beets that are firm with smooth skin. If purchased with greens, look for fresh bright leaves, and be sure to eat them too!
Storage: Beet roots should last almost a month in the refrigerator, but the leaves should be eaten with in three days. Store the leaves separate from the roots as they can leach moisture from the roots.
