How to buy: If purchasing dried chickpeas, be sure to buy them from a place with a lot of foot traffic so you’ll know they are fresh. Older chickpeas take longer to cook. Look for beans that are whole and not too broken. When buying canned beans, do not buy cans with dents or any rusting.
Storage: Use cooked beans within 3 days. Canned beans should be drained and rinsed, to remove excess sodium, then stored in an airtight container. Freeze beans without their liquid in a resealable bag.
