Sometimes, during the dog-days of summer, easy, cool, crisp summer salads of leafy greens and crunchy veggies are the only thing this particular cancer survivor wants to eat, along with, of course, the occasional slice of sweet chilled watermelon! When it’s hot, these light nutritious salads will fit the bill whether eaten as a meal or as a side with a light, lean protein like grilled fish or chicken. Better yet, they are a long way from the classic lettuce -tomato-cucumber combos that so often pass for salad, but that are merely dull. And yet sometimes when it’s hot outside, we may just want to throw together a salad of some simple leafy greens. For these times I’ve added 4 really simple oil and vinegar based dressings. They are so much tastier, not to mention healthier and cheaper than the commercial bottled salad dressings so many of us buy. With next to no effort, they can turn a simple salad of say baby spinach, butter lettuce or romaine into something truly yummy and special. You’re going to love them!
