One of my pet peeves is commercially bottled salad dressing. Making your own salad dressing is one of the quickest and cheapest steps you can take towards healthier eating. Most salad dressings are just extra virgin olive oil and an acidic liquid (vinegar or citrus juice), and salt. And that’s it! The standard vinaigrette ratio is just two parts oil to one part acid. You may even prefer a more tangy vinaigrette and try doing half and half, instead.
You can make enough dressing for a week and keep it in a jar, or measure the dressing ingredients by the teaspoon right in your salad bowl for a single meal. It couldn’t be easier!
