One of my pet peeves is commercially bottled salad dressing. Why? Because making easy healthy salad dressings is one of the quickest and cheapest steps you can take towards eating better. And it is easy. At heart most salad dressings are made from extra virgin olive oil and vinegar, plus a little salt, basic items that unlike bottled dressings, you can use to cook other things with. The basic ratio for a simple dressing is 3 oil to 1 vinegar. Good olive oils can be expensive, but vinegars aren’t, so try different sorts. Cider vinegar is a great basic to start with, also vinegar is acidic you can easily sub in freshly squeezed citrus to change things up, or add in some freshly chopped herbs. You can make enough dressing for a week and keep it in a jar, or measure the dressing ingredients by the teaspoon right in your salad bowl for a single meal, and, if you want to lighten your dressing, simply sub out one of the oils for water.
