Eggs have always been an important part of our diets, either eaten on their own or incorporated into custards, cakes, breads, batters and noodles, until the yolks came to be much maligned for the dietary cholesterol they contain. Almost overnight the whole eggs we’d eaten and enjoyed for thousands of years were labelled an enemy to heart health, with only their whites sanctioned as healthy to eat. Luckily for eggs, and for us, recent research has conclusively shown that the absorption of the dietary cholesterol into the body had been poorly understood, which has led to their rehabilitation. Organizations like the American Heart Association have quietly removed eggs from their ‘naughty’ list of foods, recommending 1-1 1/2 whole eggs day.
