I love a cooked breakfast. It must be my British origins, where great platefuls of eggs, bacon, and sausages, served with sides of baked beans and stacks of 7grain toast were all part of the weekend ritual. I must admit that I no longer indulge, or at least not very often, in this type of meaty extravaganza, I now prefer my eggs with more veggie based pairings. I found that the egg +veggie cooked breakfast was a boon when I was put on a neutropenic diet during my own cancer treatment, as were oatmeal and other grains that I could cook together with fruits and nuts. And of course handy hard-boiled eggs for a quick breakfast with some toast! Here are some tasty morning treats to start your day the right way. One caveat: make sure to cook your eggs well – no runny yolks or soft scrambles – otherwise all is breakfast as usual! Enjoy!
