I love a summer picnic. We are based in New York City, and you might think that with all that concrete that there wouldn’t be a lot of opportunity for this summery treat. Not so. It’s easy to forget that the ocean or one of the city’s amazing parks are mere subway rides away, and come summertime, the denizens of the Big Apple pack their picnic bags and head out. Central Park and Riverside Park are Manhattan’s favorite backyards, not forgetting Prospect Park in Brooklyn, and Pelham Bay Park with Orchard Beach in the Bronx. Between Memorial day and Labor day, the City fills them with an endless stream of wonderful outdoor events, all for free, including concerts. A summer picnic in the Park listening to music on a warm night is a truly beautiful thing. Although it seems easy to go into the deli and buy ready made foods, in reality it’s just as easy to put together a summer picnic at home with tastier, healthier, cancer fighting items. Frittatas make great finger foods for picnics, especially if you bake them in muffin tins like our Mini quiches, and if you’re vegan, our Farinata is a protein packed treat. Chilled soup can go in a thermos. We’ve put in a couple of cooked veg salads, including a lemony potato salad, and to keep it light, they use tasty vinaigrettes instead of creamier dressings. If you like leafy green salads, wash and bag them but keep the dressing separate until you’re ready to eat. Then you can toss them with the dressing right in the bag! Slice avocados when you get there. Fresh fruit makes the best dessert in the summer, although we have added a couple of very portable, extremely edible baked treats to the mix. And as tempting as it may be, don’t fill your cooler with drinks! Bag some ice to throw in your drinks when you get there, keep it in the bottom of the cooler and pile your picnic items on top. It will keep your more perishable picnic goodies safe and cool while you travel. Or you can always buy a separate cooler! Enjoy your summer!
