The histories of Mexico and the Southwestern states of the US have long been intertwined, as have their foods. Many of our favorite cuisines from the Southwest and Texas are heavily infused with spicy flavors redolent of south of the border. And we have made these flavors and foods our own. Tex-Mex classics like tacos, burritos, quesadillas and, of course, chili are not strictly Mexican dishes, but delicious American food that is a result of this long history and association.
