I can clearly remember the first time I went to the Southwest. I was a strict vegetarian at the time, and found the feasts of corn, beans, and spicy southwestern flavors a real treat. The best part about Southwestern food is that ingredients like black beans and chilis are so good for us. Black beans are packed with fiber and are high in a number of antioxidants, and capsacin the “heat factor” of chilis has been studied for its anti-cancer effects.
