Being given the Bland Diet by your medical team can feel like a sentence to food jail. So much is taken off your plate, and what’s left seems to be either steamed or poached, in other words dull. But with a little ingenuity, there are some great workarounds, especially with sides that can jazz up plain cooked proteins like chicken or fish. One is roasting your veggies. Roasting intensifies their flavor and doesn’t need as much oil as you’d imagine. You can toss them in as little as a tablespoon of oil for 4 servings, or, for larger veg like cauliflower steaks, just brush them with a little oil.  Baking is also another great option. After all, few things can beat a baked potato! Anyway, these ideas should help give you a reason to look forward to your veggies!
