When people I meet tell me they are nervous about using up leftovers, I try to change their minds. You can make delicious food from leftovers, in fact some of the tastiest things I make are what I call ‘fridge emptiers’, when I get creative with what’s on hand. All of the dishes in this menu can use up something in one form or another, from leftover steamed greens in a pasta or a frittata, to a delicious creamy soup made with extra roasted sweet potatoes. Fried rice is a particular favorite of mine, and I almost always make extra rice just to be able to stir-fry it up. And that roast chicken can become soup, or salad, a tasty sandwich or even a curry depending on your mood. So many yummy ways not to let good food go to waste!
