Winter salads? Come the Holidays, no-one is thinking of salads. It’s the mid-winter, it gets dark early, it’s cold. Where are all the soft sweet greens of summer? And yet, as she always does, Mother Nature provides us with a slew of vibrant, seriously nutritious, cancer fighting seasonal winter veggies bursting with vitamins, that are great to make delicious winter salads with, cooked or raw. Think endive, radicchio, cabbage, arugula, beets and carrots to name but a few. And let’s not forget the fruits we can add to make them even tastier, like apples, pears, pomegranates, dried fruits and of course citrus. Or throw in a handful of protein packed nuts. Make a salad with any combo of these and you will have a healthy Holiday crowd pleaser on your hands.
