A High Five for High Fiber

The American Institute of Cancer Research (AICR) recommends five servings of whole fruits and vegetables a day, along with whole grains and lean proteins. What do these recommendations add up to? Eat the high five for high fiber! Why is this important? If you’re not into eating fruits and vegetables and other whole foods,  you won’t be getting enough fiber in your diet which can end up being a problem for your health. Fiber not only helps to keep you regular, it keeps you feeling full longer which can help with maintaining a healthy weight, and it is protective of cancers like colon cancer. Unfortunately it’s not really enough to dose yourself with a glass of soluble fiber, it’s important to eat a variety of fiber rich whole foods. We know it takes time to cook, and that you may not have a lot, so try using frozen or pre-cut vegetables, or batch cook soups to freeze in portion sizes to make your weeknight cooking easier. Here are some veggie rich recipes to help you start adding these foods to your kitchen repertoire.
