Collard Green Recipes

In season: Collard peak season is January through April, but is readily available year-round.
How to buy: Choose dark green leaves without yellow or browning spots. The leaves should be crisp and not wilting. Smaller leaves are younger and more tender.
Storage: Store unwashed collard leaves with damp paper towels in a loose plastic bag. Use within five days. Blanch and drain before freezing for up to four months.
