Greek Yogurt is one of my favorite foods. It is often thought of as a fruity snack or a breakfast item, but when you buy it plain, it can become one of the most useful items in your pantry, healthy too. It is probiotic, high in protein, and low in fat and sugar. In this class we’ll make our own flavored yogurt with much less sugar than store-bought brands, also a deliciously healthy Ranch dressing, a creamy hot soup, and a chilled spring soup too. It makes delicious desserts too, like our Lemony Berry Parfait even a light and yummy ‘cheesecake’. Look and learn!
Healthy Ranch Dressing
Greek yogurt is the key to this delicious version of Healthy Yogurt Ranch Dressing. It has fewer calories than classic recipes, but more protein and a lot less fat thanks to the yogurt. Best yet, it sacrifices none of the taste we know and love.
Leek and Potato Soup
This is a great winter soup for a cold day. Better yet, it’s fast to put together. You can have it on the table in 30 minutes. The dark leek greens give the soup extra flavor, while the yogurt gives the soup a creamy tang.
Lemony Berry Parfait
This Lemony Berry Parfait is an easy dessert to make and it’s really yummy- a true crowd pleaser. The lemony yogurt spooned on top will give you a twofer as it is delicious in its own right. If you make the blueberry compote ahead of time it literally can be put together in 5 minutes, great when you’re tired from cancer treatment, or simply strapped for time. Try it.
Although we call this light fluffy yogurt based dessert a cheesecake, there is no actual cream cheese in it. But you’d never know! It’s one of the many wonderful tricks you can do with creamy Greek yogurt. Give it a shot. It really is delicious.
Chilled Wheat berry and Cucumber Soup
This Cucumber, Yogurt & Wheat Berry Soup turned me from a chilled soup skeptic into a fan. I find it’s light, creamy texture combined with chewy wheat berries irresistible. And that little bite of lemon and mint? Delicious.
Creamy Potato Salad
The dressing on this Creamy Potato Salad is absolutely delicious. It proves that you don’t need mayo to make this creamily savory summer salad treat. If you have to watch your weight, this recipe is really worth a try. Greek yogurt is a fabulous substitute in the kitchen for many high fat items, including mayonnaise. Even lite mayo has 3 times the calories cup for cup than full fat Greek yogurt, amazing really. And Greek yogurt naturally has the creamy rich mouth-feel of mayo, so you really won’t miss it.
