Beth’s Lentil & Roasted Red Pepper Soup
After being diagnosed with prostate cancer, famous financier Mike Milken radically transformed his diet with the help of Beth Ginsberg. Together they wrote “A Taste For Living,” a cookbook full of cancer-fighting recipes. Beth gave us this delicious soup recipe.
1. Heat olive oil in a sauté pan over medium high heat. Add onions and sauté until they go clear. Add garlic and sauté for 30 seconds.
2. Add celery, carrots, lentils, stock and roasted red peppers. Bring to a boil and simmer for about 20 minutes.
3. Season with sea salt and black pepper and serve.
