  • 2 tablespoons olive oil, divided
  • ¾ cup red onion, sliced
  • 4 gala apples, sliced
  • 4 chicken sausages, sliced
  • 4 sprigs thyme, leaves picked
  • 1 tablespoon lemon juice
  • salt and pepper to taste
