Quinoa with Roasted Ratatouille

This quinoa with roasted ratatouille is one of the most delicious and nutritious dishes you can have. Quinoa is one of the few grains that can boast being a complete protein. It is a great addition to any menu, vegetarian or otherwise. Roasting makes a flavorful version of ratatouille, the classic French summer vegetable stew. If you like spicy food, swap the red pepper for a couple of dark green poblano peppers. For even cooking, cut the vegetables into similar-sized pieces.
