This Banana, Oat and Pecan Toast tastes like the breakfast version of pecan pie. The added fruit and oats, however, make it a much healthier option. It will satisfy your sweet tooth, but also give you enough protein and fiber to start your day on the right foot.
1. Preheat oven to 350 degrees.
2. In a small bowl, combine butter, rolled oats, pecans and 1 teaspoon honey. Spread the mixture on a baking sheet lined with parchment paper and bake until golden brown, about 10 minutes.
3. Toast bread slices on a cookie sheet in the oven until golden brown, about ten minutes.
4. Divide the mashed banana among the four pieces of toast and spread evenly. Top with the oat mixture. Drizzle 1 teaspoon of honey on top of each piece of toast.
