This Banana, Oat and Pecan Toast tastes like the breakfast version of pecan pie. The added fruit and oats, however, make it a much healthier option. It will satisfy your sweet tooth, but also give you enough protein and fiber to start your day on the right foot.
- Preheat oven to 350 degrees.
- In a small bowl, combine butter, rolled oats, pecans and 1 teaspoon honey. Spread the mixture on a baking sheet lined with parchment paper and bake until golden brown, about 10 minutes.
- Toast bread slices on a cookie sheet in the oven until golden brown, about ten minutes.
- Divide the mashed banana among the four pieces of toast and spread evenly. Top with the oat mixture. Drizzle 1 teaspoon of honey on top of each piece of toast.
