This Mediterranean style Chickpea Cucumber Toast is perfect for any time of day and is packed with flavor combinations you aren’t expecting. The cucumber, chickpea, and lemon juice make for a heavenly first bite that will keep you wanting more. Good thing it serves six!
1. In a medium sized bowl, mash chickpeas with a potato masher or fork. Mix in lemon juice, olive oil, and parsley. Season with salt and pepper.
2. Toast bread slices until golden brown.
3. Divide the chickpea mixture between the 6 pieces of toast and spread evenly. Top the toast with cucumbers.
