Sauerkraut Slaw with Chicken Bratwurst recipe is the perfect weeknight comfort food and can be put together in a flash. Sauerkraut and bratwurst is often eaten on New Year’s Day to bring blessings and health for the New Year. We all know sauerkraut and bratwurst are loved alongside a large glass of beer during Oktoberfest, but this classic combination can be eaten anytime of year. The health benefits of sauerkraut are numerous. Sauerkraut is packed with dietary fiber, vitamins and minerals, and provides a dose of probiotics for your gut health! Serve it alongside your favorite chicken sausage for a high protein low fat healthier option than traditional pork.
1. In a large sauté pan over medium heat, add olive oil. Add onion, fennel and ginger. Sauté until onion and fennel are soft, about 10 minutes
2. Add apple and continue cooking until apples are browned and slightly reduced, about 5 minutes.
3. In a separate sauté pan over medium high heat, cook bratwurst, turning occasionally until all sides are browned and crispy.
4. Add sauerkraut, caraway seeds, and cinnamon to onions, fennel, and apples. Continue cooking and stirring occasionally until sauerkraut is fully incorporated and warmed through.
