Almond Avocado Pudding
This lovely pale green pudding is what I’d call real comfort food. The rich taste and smooth texture make this high-fat, high-calorie treat deceptively easy to eat. This pudding is a delicious, nutritious way to bring in those extra calories when they are needed, but if they aren’t, go easy. It’s a cinch to overindulge in this yummily healthy little dessert.
3. Peel and pit the avocado and mash or blend until very smooth. Stir into the warm custard, taste for sweetness, then transfer to a bowl, cover with plastic and allow to cool and set in the refrigerator for at least 1 hour.
