I always like to tell people to make their freezer their friend during cancer treatment. Judging by how it was nearly impossible for us to keep these delicious little breadless “sandwiches” in our freezer after testing, my guess is that this would make the freezer a BFF. These rich, nutritious little frozen bites really are a wonderful snack for almost everyone going through treatment, not to mention the kids in your family too, big or small. Don’t take my word for it — try these Frozen Banana Sandwiches.

Preparation

1. Assemble the sandwiches by topping half of the banana slices with a teaspoon of almond butter then a teaspoon of almonds and finally top with another banana slice.

2. Place the sandwiches on a cookie sheet and place in the freezer. Freeze for about an hour or until the sandwiches are frozen.

3. Serve or transfer to a container and store in freezer.
