Avocado and Egg Toast is the perfect healthy breakfast. Packed with so much flavor you won’t want to miss a bite.


  • 1⁄2 avocado, ripe
  • 2 slices whole grain toast
  • Salt and pepper, to taste
  • Cayenne, to taste (optional)
  • Squeeze of lime (optional)
  • 1 hard-boiled egg, sliced


  1. Scoop out the avocado flesh and spread it onto the toast by mashing it with the back of a fork. 
  2. Sprinkle salt, pepper, cayenne and squeeze of lime. Then layer hard-boiled egg slices on top of the avocado mash, and sprinkle with a little more salt and pepper. 

Chef Tips

Hass and Florida avocados are quite different in taste and texture.

Here’s a quick guide:

  • Hass avocados have a gnarly dark green, sometimes almost brown skin, and are about the size of a pear. They are ripe when just soft to the touch and are rich and butterytasting.
  • Florida avocados are bright green with a smooth skin and are much larger than Hass. Like Hass, they are ripe when they just soft to the touch. Florida avocados have a lighter, sweeter almost watery taste than Hass, and their flesh is less creamy and rich.

Serve with corn or whole grain tortillas and/or toast.
