Mardi Gras is coming up and it’s a good moment to celebrate all the deliciousness that is Southern cooking. I got my first real taste of it at Dye’s Gullah Fixin’s on Hilton Head Island and have been in love ever since. Southern cooking is a cuisine synonymous with high calorie, high fat foods and cooking methods, but it doesn’t have to be. It can be made in a less calorific way and still be truly delicious. And of course we had to add a couple of desserts that are probably better eaten in moderation. Now I don’t pretend that what’s to follow is anything but inspired by the real thing, but I can promise you that everything here tastes really, really good. Definitely worth trying.
