Ingredients

  • 1⁄2 avocado, ripe
  • 2 slices whole grain toast
  • Salt and pepper, to taste
  • Cayenne, to taste (optional)
  • Squeeze of lime (optional)
  • 1 hard-boiled egg, sliced

Directions

  1. Scoop out the avocado flesh and spread it onto the toast by mashing it with the back of a fork. 
  2. Sprinkle salt, pepper, cayenne and squeeze of lime. Then layer hard-boiled egg slices on top of the avocado mash, and sprinkle with a little more salt and pepper.
