This Kale & Melon Smoothie is a green powerhouse of a smoothie and is absolutely delicious and so refreshing to sip on when it’s hot outside. It is also a really good way to eat, or rather drink, the nutrition powerhouse kale. Thanks to the melon, there’s no bitterness here, just sweetness and health.

Preparation

  1. In a blender, puree the honeydew melon and the ice cubes. Add the kale, apple, and lemon juice. Blend until very smooth, adding a little cold water if necessary. Serve immediately.

  • 1½ cups cubed honeydew melon
  • 4 ice cubes
  • 1 cup chopped kale
  • ½ medium apple, peeled, cored and cubed
  • 1 tablespoon lemon juice (for a sore mouth see Ann’s Tips)

Ann's Tips and Tricks

Honeydew melon is ripe when the flower end gives a little when pushed with your fingers. If your mouth is sore, use 1 teaspoon of grated lemon zest instead of juice.
