Who says breakfast has to be pancakes or eggs and bacon? These breakfast burritos are a tasty, satisfying option to mix things up in the morning. They are loaded with protein and are just the right amount spicy. The turmeric works double duty, adding anti-inflammatory, antioxidant and anti-cancer properties, as well as flavor, to the tofu. The healthy fats from the avocado add a nice creaminess and have the added bonus of keeping your heart happy and healthy. Quickly saute the tofu in the spice mix, then roll up burritos to order for omnivores, vegetarians, and vegans alike!


  1. In a sauté pan over medium heat, add olive oil. Add tofu, turmeric, onion powder, garlic powder and cumin. Cook for about 5 minutes and season with salt. Cool.
  2. Place tortillas on a workstation. Place a portion of tofu, beans, avocados and salsa on each tortilla.  Wrap into a burrito.

4 whole wheat tortillas

1 cup cooked black beans

1 avocado

1 cup pico de gallo or other salsa
