I have so many different, spices, grains and beans on hand in my kitchen that the girls in the office laughingly refer to my pantry as ‘The Store’. When Hurricane Sandy hit New York, I realized that I had enough potential meals in it to last me for weeks. But it didn’t start out that way. The recipes in this slideshow use some really basic pantry items, like onions, garlic, canned tuna, canned tomatoes and beans, dried lentils and chickpeas, rice, pasta, some favorite frozen veggies and of course some good olive oil. Throw in a handful or two chopped parsley and a couple of bay leaves and you are set to create an endless array of cheap, wholesome, delicious meals.
