Hummus is usually associated with chickpeas, but not this one. You’ll find this hummus is pleasantly pink, thanks to the jewel-like red of the beets that are used to make it. Beets are packed full of nutrients, so dive in!
- Blend all ingredients in a food processor until smooth. Taste for seasoning. Sprinkle with the extra lemon zest and drizzle with olive oil.
- Serve with Whole Wheat Pita Chips or celery sticks.

If you want to save some time, look for Rocal vacuum packed, pre-cooked and peeled beets in the supermarket. These beets are a great pantry standby. They are vinegar free and, left unopened, will keep almost indefinitely.
