Hummus is usually associated with chickpeas, but not this one. You’ll find this hummus is pleasantly pink, thanks to the jewel-like red of the beets that are used to make it. Beets are packed full...

  • 6 medium beets (12 ounces), boiled and peeled
  • 3 tablespoons tahini
  • 1 small garlic clove
  • Juice from half a medium lemon
  • 1 teaspoon lemon zest, plus an extra pinch for garnish
  • Sea salt, to taste

Chef Tips

If you want to save some time, look for Rocal vacuum packed, pre-cooked and peeled beets in the supermarket. These beets are a great pantry standby. They are vinegar free and, left unopened, will keep almost indefinitely.
