Ingredients

  • 2 ripe peaches, pitted and cut into a ½-inch dice
  • 1 to 2 teaspoons minced chipotle in adobo, or to taste (see Chef Tips)
  • 2 tablespoons chopped cilantro
  • 1 tablespoon fresh lime juice
  • 1 tablespoon minced red onion

  1. Combine all the ingredients in a small bowl. Taste and adjust. Let sit for 5 minutes, then serve with Baked Tortilla Chips.

Chef Tips

Chipotle peppers in adobo are quite spicy. You can either use just the adobo sauce that the whole peppers are canned in, or, for a spicier salsa, you can chop and add a whole pepper.

These days, chipotle peppers in adobo can be found in most supermarkets in the Latin American or international foods sections.
