  • ½ cup cashews
  • 1 cup pineapple chunks, frozen (see Chef Tips)
  • 1 cup kale, de-stemmed and torn into pieces
  • ½ medium apple, cut into chunks
  • 1½ – 2 cups milk (dairy or plant-based)

  1. Place the cashews in a bowl or small container and add enough water to cover them by a half-inch. Transfer to the fridge to soak overnight (see Chef Tips). 
  2. Drain the water from the cashews. Add all ingredients, including 1½ cups of milk, to a high-speed blender and blend on high until smooth. Add another ½ cup of milk to thin the smoothie if needed. 
  3. Serve immediately. 

Chef Tips

Swap the pineapple chunks with frozen fruit of your choice. Using frozen fruit instead of ice is a great way to get texture without diluting the flavor of smoothies.

If you’re short on time, soak the cashews at room temperature for 2-3 hours to soften them.
