  • 2 cups spinach
  • ¼ teaspoon peppermint extract
  • 3 tablespoons vanilla protein powder
  • ¼ cup heavy cream or coconut cream (see Chef Tips)
  • 1 cup almond milk
  • 1 teaspoon agave, or to taste for a sweeter smoothie
  • 1 cup ice

  1. Place all ingredients in a blender and blend until desired consistency.

Chef Tips

Using heavy cream or coconut cream is a great way to get extra calories when you need them, but if you prefer a lower-fat option, leave out the cream and increase the almond milk to get your preferred smoothie consistency.

If your immune system is compromised and you buy pre-washed bagged spinach, always wash it again to be on the safe side. Use whichever protein powder suits your needs, whether whey, egg, soy – there are so many – but try to buy the best quality you can.
