
Caesar salad is traditionally made with crisp dark leaved Romaine lettuce. Kale has this crisp quality too, making it an excellent vehicle for a crunchy kale caesar salad. Preparation
1. In a large salad bowl toss the kale with the dressing until well coated. Taste for seasonings. Top with croutons and Parmesan cheese.
Ann's Tips and Tricks

When making raw kale salads I find the leaves of Lacinato or Tuscan Kale the best choice, though you can make this dish with any of the varieties available.
