  • 6 cups kale, well washed, stems removed and ripped into pieces
  • 1 recipe Yogurt Caesar Dressing
  • 1 recipe Croutons
  • 3 tablespoons parmesan cheese, freshly grated

  1. In a large salad bowl toss the kale with the dressing until well coated. Taste for seasonings. Top with croutons and Parmesan cheese.

When making raw kale salads, the leaves of Lacinato or Tuscan Kale are the best choice, though make this dish with any of the varieties available.
