  • 6 cups kale, well washed, stems removed and ripped into pieces
  • 1 recipe Yogurt Caesar Dressing
  • 1 recipe Croutons
  • 3 tablespoons freshly grated Parmesan cheese

Directions

  1. In a large salad bowl toss the kale with the dressing until well coated. Taste for seasonings. Top with croutons and Parmesan cheese.

Chef Tips

When making raw kale salads I find the leaves of Lacinato or Tuscan Kale the best choice, though you can make this dish with any of the varieties available.
