Salty miso and sharp citrus are a wonderful foil for the earthy taste and texture of steamed collard greens. The miso brings protein, too. This steamed collard greens with miso lime sauce side is a welcome addition to your plate if you’re on a neutropenic or a bland diet, and feel like jazzing up the flavors. It is great with fish or chicken, or even eaten on its own paired with some quinoa or brown rice for a quick dinner.
1. Strip the leaves from the hard stems of the collard greens. Discard the stems.
2. Put the leaves in a large saucepan with 1 cup of cold water. Bring to a boil, sprinkle with salt then cover. Cook over low heat for 5 minutes. Drain.
3. Squeeze the water out of the collards. Slice then place on a plate and drizzle with the Miso Lime Sauce.
