This lightly spiced yogurt marinade is simple and delicious. It turns chicken or fish into something quite exotic. Yogurt is a great base for marinades as its slight acidity slightly pickles or “cooks” the meat...

  • 1 cup plain yogurt
  • 1 medium shallot, minced
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • ½ teaspoon garam marsala
  • 1 tablespoon chopped cilantro

Chef Tips

If you’re not keen on cilantro, use chopped mint.
