This lightly spiced yogurt marinade is simple and delicious. It turns chicken or fish into something quite exotic. Yogurt is a great base for marinades as its slight acidity slightly pickles or “cooks” the meat while tenderizing it and keeping it juicy. The spices we’ve used to infuse the yogurt, make anything marinated in it very, very tasty.
Ann’s Tips and Tricks
If you’re not keen on cilantro, use chopped mint.
This recipe makes enough marinade for ¾ lb of chicken breasts or fish fillets.
