Make the freezer your friend! Use it to plan make-ahead meals during chemo. When I went through chemotherapy and was almost too tired to eat — let alone cook — I realized that I could use my freezer for more than storing ice cream. During my more energetic periods, I cooked, bagged and froze easy to eat meals, and stored them in the freezer for the down times. This trick ended up being my greatest ally in eating well during treatment — my husband’s too. Here are some tried and true favorites. There are quite a few soups as I found these easiest to eat, also pestos and pasta sauces as these can make a meal in a minute. Rice and quinoa freeze well, and of course I have to include apple sauce, always a sweet standby when you’re feeling lousy.
