How to buy: Look for firm dry mushrooms with no dark slimy patches or clammy skin. All mushrooms have a distinctive light, almost sweet smell when fresh. If they smell dank or sour, they are past their prime. Take care especially when buying pre-packaged mushrooms. The plastic film creates condensation that can encourage spoilage in the gills underneath, plus the packaging can camouflage not-so-fresh produce
Storage: Keep mushrooms unwrapped in their original containers or in a paper bag. If storing in a plastic bag, make sure it is loose and store with a dry paper towel. Use within a few days of purchasing.
