Eating gluten-free can put a lot of heavily processed foods onto your plate, one of the drawbacks of having to eat this way. But in the summertime, with the abundance of fresh fruits and veggies to be had, eating gluten-free is easy. This menu of summery gluten-free treats really shows you how it can be done, especially as we head into the late summer cookout season. There are baked treats that use simply natural ingredients, like Spicy Fresh Cornbread, our yummy Farinata, both vegan incidentally, and even a fabulous new gluten-free flatbread. There are super simple yet delicious veggie sides and salads, one of my faves being the Okra Tomato Stew. And I don’t have to tell you to use corn tortillas for the fabulous fish tacos.
