Lemons and limes are kitchen basics. Use them to add a sharp citrus highlights to savory dishes, and to enhance the flavor of fruits and berries.
How to buy: Choose lemons and limes that... are heavier than they appear. The skins should be thin and taut, and not too hard — when pressed the fruit should give just a little. Avoid dull-colored or wrinkled fruits. If planning to use the zest, choose organic. Lemons should not be more than 3-inches long.
Storage: Keep in a plastic bag in the refrigerator for up to two weeks. Cut lemons and limes should be wrapped with plastic and can be refrigerated for up to five days.
