One of the things I love about America is that fabulous hybrid meal, brunch. There’s nothing like it anywhere else. During the Holiday festivities, what’s better than having a lazy weekend morning and going out to get your eggs in ways that are altogether more satisfying and more exotic than the usual breakfast repertoire? Making brunch dishes at home to treat the ones you love while treating yourself – it’s better for your health, and better for your wallet too. The brunch recipes we suggest are super easy to make, I’m thinking about our Huevos Rancheros and hearty frittatas. And then there are the classic weekend faves, pancakes and French toast. With berries and fruity compotes instead of pure syrup, they satisfy the sweet tooth but with a lot less sugar than at the diner. There’s even pizza or a vegan caesar salad if you prefer it. Hmmm. Just thinking about all this is making me hungry. Better get cooking!
