Dark leafy greens have some of the most beneficial vitamins, minerals, and antioxidants of all vegetable varieties. And, yes, they can be delicious when cooked correctly—something that is not often easy. My friends in my hospital’s chemo suite often talked about how to make these cancer-fighting vegetables palatable. It became my mission to help others love greens as I do, and is one of the reasons I started CFYL. Here are some of my favorite recipes.
